soft & crispy gluten-free waffles


Some days I crave waffles.
Like really bad.
There's only one cure.
And that's to make waffles.
And these waffles are dang tasty.




You want to know the best flavor combination?
A crispy waffle topped with butter and applesauce, drizzled with honey, and sprinkled with cinnamon.
It's so good.
OH.MY.GOODNESS. Is it good.



Gluten-free Waffles

  • 1 cup brown rice flour
  • 1/2 cup white rice flour
  • 1/4 cup tapioca starch
  • 1/4 cup cornstarch
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1-2 tablespoons sugar (brown or white)
  • 1/4 cup oil
  • 2 eggs
  • 1 1/2 cups buttermilk (or almond milk with a touch of lemon)
  • dash of cinnamon (optional)

In a large bowl, mix all ingredients together, with a whisk. (Yes, it's really that easy.)

Let waffle batter sit for a few minutes, to thicken.

Pour batter into sprayed waffle iron and cook according to manufacturer's instructions.

P.S. We use a Krups Waffle Iron and LOVE IT!
